I don't want to sound like I am belittling you, not my intent. But with a modest investment in tools, you can easily do this yourself. Plenty of youtube videos to walk you through it, and less than 240 seconds of work. Basically loosen the caliper, squeeze lever (this centers it on rotor)...

You absolutely can. And since the Rover is somewhere north of (depending on additions) 60lbs, you will likely get more of a workout than you want.

I have the TRP Spyke caliper on the back of one of my ebikes, and can't recommend it strongly enough. Very strong.

Yes, plug in the charger *before* plugging into the battery. I have one charger that must have a good sized cap on the output, and every time I forgot to energize the charger first, ZAP!, nice spark. That's not what blew the fuse in my case, but it does do this every time.

Try it and see, Should be industry standard. I just put shimano hydraulic on the Rover front, it was plug and play, including my previously installed 203mm rotor.

Three socket head screws to remove the brake, and eliminate it as a source. A bike stand is worth its weight in cash for these issues.

Well that would limit you to trails or roads with a 15 mph limit.
