Looks like a nicely done kit. A dry bag stuff sack that can hold water is a nice touch, and really lightweight.

I drink coffee in the morning, wife drinks tea all day when at camp, and we boil water for a thermos and for a slow cooker... the extra inch of diameter matters less than capacity.

That is a three to four person bit of kit for a sagwagon that I had, but the silicone sided stuff should be be available in 1 or 2 person sized...cleaning is easy on the sides like any nonstick. But the stainless steel bottom will probably burn stuff... I had a separate fry pan in the van. But...

I didn't follow your links to see what you are considering but I can recommend the collapsible (silicon sided ) cookware based on a kettle I loved. Pot should work just as well, but expensive...

Best advice I can think of if it's been years (or decades) since a newbie rode a bike is go rent and ride a couple of manual bikes before committing to any ebike. Make sure you really like riding a bike in your area in the first place. There are many ebikes that are still bikes not small...

Unfortunately I live mostly uphill from anywhere I might want to go, and my prevailing winds follow the 50 mph highway w/o a shoulder out from my house, so I really need my battery to get home, not away from home.
