Wheel to tire size

So I was at the shop talking to the Techs at Source Bicycle. I told them I had Schwable Big Apple plus 29x2.0 Tires and wanted to put them on the stock Biktrix 29x3 inch rims. They said they would not recommend it. So my question is it doable? Will the ride suck? I spent 60$ on these tires would love to use them on my new Ultra for road travel.

What is the internal diameter of the tires?

Perhaps Vee Speedster 2.8" would be big enough, perhaps not.

Talked to Roshan today. I am going to work on putting these Schwables on the bike and see how it goes with the front one first. =-) Hopefully everything comes together on it =-)
