If you had a local bike repair shop why didn't you start with them? It's not easy to diagnose a problem over the phone.

I put cable activated on my Rover and they work great and are super easy to install as you don't need to deal with installing anything but the calipers.

I set up mine near my workbench and rigged up a 2X4 that slides out of the bench and clamps to the frame if I want to steady the bike although I rarely use it. I like that system as I can lift the bike to any height I want for convenience.

Sounds like the foam would take up more space in your bag than the jacks.

Interesting. I find handlebar jacks work great when I need to remove a wheel.
