This a torque based pedal assist system, so the level should mainly be higher multiplier of your effort. That said, when you ask for a higher multiplier of your effort, you are able to generate more power and therefore go faster.

I don't believe any (or very few) ebike or car batteries are LFP. LFP has a lower energy density, so you would lose significant capacity in the restricted space available on an ebike...

Evelo fitted bikes with a Bafang ultra and Enviolo hubs for years, so I would not be too worried.

The cap is only there to create the appropriate spacing and centering inside the wheel. It has different sizes depending on the width of your swing arm (148, 142, 135...) In an emergency, you can just add washers to fill the gap on that side.

I was just commenting on your remark that with the same power comes the same torque, and which is incorrect for an electric motor. On my bike with a fully controllable controller, I can set different torque levels for the same Output power. This is done as I mentioned by the controller...
