If you want to get technical, throw away the torque wrench and measure bolt stretch instead. There is a lot of if, ands, and buts in the proper use of a torque wrench.

That's your brake cable that's slipped out. If you line up the slots of the ferrule and lock ring you should be able to slip it back into position. Make sure the slots aren't in line after reassembly.

Grin (ebikes.ca) has how to lace a hub motor video, and a spoke calculator, which I have used to build 3 motor wheels. They even sell cut to length spokes. It worked out very well for me.

Have you been checked for sleep apnea. I had problems with atrial fib, a CPAP machine ended that.

When I want the exercise I ride a pedal-only bike. No need for dead weight. Low gearing helps with the bad knees.
