Having a twist throttle on the right on my e-bike, I have also put the Front brake on the right. This is the logic I was use to on motorcycles all my life, and it also make sense as you don't want to be twisting that throttle and braking at the same time.

You should ask the manufacturer what the spoke tension should be. If the rim is centered on the HUB, the tension would be the same on both side, but if the rim is off center (asymmetric lacing), then the tension would be different.

There are a few threads here about enviolo shifting fixes. It does sound like badly adjusted shifter cables and or frayed cables.
