I do the same thing but always remove the cassette with a removal tool before unscrewing the screws. The core will pull right out. Make sure not to lose the copper washer on the axle.

Looks to be a bad fork. The hole on the fork should be centered over the tire and is where one would attach fenders and other accessories. It's off to the side.

You use sight and sound as described in the Park Tools video posted by Timpo to get the derailleur dialed in (really really close). Then use the barrel adjuster on the shifter cable for fine adjustments while riding to complete the setup.

Attached is the manual for the SW102 display. When I bought mine, there was a card in the box with a QR code linking to the manual. The EggRider edition is the SW102 with custom firmware and does a lot more stuff.
I go up curbs all the time. But I do lean forward and stand on the pedals to assist. Never had a problem with pinches, broken spokes, or bent rims. Though like m@Robertson, I have custom built wheels (Sapim strong 14 ga spokes).
