    I’m late to this thread, but since you have a Shimano Deore derailleur you should follow Shimano instructions, not SRAM. Some of the wide range SRAM derailleurs might have different chain length requirements.

    The serial number and 48v controller indicate to me that it's a 750watt. The sticker for the bicycle was probably just to get around import/use restrictions. A lot of that going around.

    That's quite low, as the full 60kg of pressure should output over 3200mV. What were your SPDxx table settings? What was your pedal crank cadence? What was your bike speed? Maybe try setting Full(kg) to some lower value, like 30, for the SPDxx columns corresponding to your bike speed up the hill.
