As far as I know, here in germany no LBS works on Bosch or Yamaha motors on their own, they all get sent to the company. LBS are specialists for bikes, not motors, therefore its logical that they outsource the job to the company they got the motors from.

First you should research if ebikes are actually allowed at the bike park you visit. There are many bike parks who dont allow ebikes on their trails (for whatever reason) and that would already answer your question then. If you only go DH and use a lift for climbing, I´d leave the battery out...

Tbh? They dont need to. Last batch of Step-Thru were about 300 bikes. They sold out in under 5 minutes. Thats 450.000 $ made in 5 minutes. But its sad, that they dont manage to sort out more then 300 bikes for a batch, when they know people are going to rip that number apart in under 5...

I do agree with your logic, but somehow the handling that I experienced told me otherwise. The handling of the shorter bike was horrible, dont ask me why though. Its not even that much of a difference in wheelbase lenght.

I´d avoid the "low-steps", because the wheelbase is shorter on the low steps and the bike feels completly different. We tried out a low-step vs a normal step frame and the bike behaved completly different. My father bought the "normal" one.
