    As for the rear panniers I use Ortleib Gravel Packs, 12 liters each, and reasonably priced. Got them from REI, on sale for about $130 for the pair. The mounts are pretty solid.

    That’s exactly the first thing I did, looked at the label on the tire. But in the specs it mentions 29… Anyhow, I received a reply from Canyon this afternoon and they state that it is indeed 27.5 and the motor is their Performance Line Speed Motor, and not the CX….

    I agree. My only ‘non-use’ mtb is a late 90’s Dean ti Colonel, hardtail, rigid, which would almost be a perfect candidate, except for that it is non-disc (I feel much safer with discs on a loaded rig) and that it has no rack braze-ons.
