Wow, all this help and info is great to have! Ok, I've at least decided to go for that bike and ebikecanada for the 10T, I just need to figure out the rest of the componenets and fit. I'll return to this post once I have the bike in hand.
Thanks all, I appreciate the comments so far. Seems if I want to do this as a build, a simple kit won't be enough and I'll need to learn a fair bit more (I honestly don't understand much of what's been said so far except that I need to go wholly custom...).

Hey @Chris Hammond , so I'm curious, how do I fit two torque arms on the hub? They all seem to be closed rings and I have no idea how to get it over the wire on the other side. Or would they stack together on the same side?
Thanks @Nova Haibike , that's good to know! Upon further inspection though, I think I can just move the sensors over to my current brakes with some after market magnets and a new hole for the sensor from the ebike kit. I'll try that first before spending more cash. Happy it's not an actual...
Looking at my housing, I don't think I can just pull out the old brake piece. However, looking at the ebikekit's brakes, they are using a magnetic system it looks like. I don't know how feasible it is (for example, my current housing may be interfere with the magnet...) but I'm considering...

That's a good note John. I specifically got my bike as well for the expected weight limit (I'm pretty heavy) so It should be good to go with me and the added components. But breaking is a good point, part of this is that I wanted to implement regenerative breaking, if anyone has a good direction...
